When you create a new email and start typing in an address field email address suggestions will appear. The suggestions are from both your contact list and also "Known Senders".
When you send an email, the recipient address is added to the "Known senders" list which is also checked as part of the spam rule checking. (View)

You can delete "Known Senders" email addresses in the app settings (View) - Email Management - Known Senders.
